Hot 'N Spicy Scrapple Manicotti Recipe, a twist on traditional manicotti

This is not your momma's manicotti. Hot 'N Spicy scrapple, spinach and kale pack a punch the whole family will enjoy.

Ingredients

4 large manicotti noodles

1 lb RAPA Hot 'N Spicy Scrapple

1 cup baby spinach

1 cup kale

8 ounces cream cheese, softened

1 10-ounce can mild diced tomatoes and green chilies (we used RO*TEL)

1/2 cup pepper jack cheese

1/2 cup parmesan cheese

Directions

Preheat oven to 350 degrees.


Cook noodles as directed on package. While noodles are cooking, chop the spinach and kale. Set aside.


Fry and chop the RAPA Hot 'N Spicy Scrapple.


When scrapple is done, add spinach and kale; mix well. Add softened cream cheese; mix well. Set aside.


Spray baking pan with nonstick cooking spray. Stuff the noodles with the mixture. Drain tomatoes and green chilies and top the noodles. Add pepper jack and parmesan cheese on top.


Place in oven for 20-25 minutes.
