Bacon Scrapple French Toast Sandwich
Ingredients:
Bread - Sweet honey Bread
2 cups of warm water
2 packets of active dry yeast
1/2 cup of honey
4 1/2 cups of unbleached all-purpose flour
1/4 cup of sugar
1 1/2 teaspoons of salt
1/4 cup of melted butter
Sweet Honey Bread
Bacon flavored Scrapple
3 brown eggs (Over easy)-(fresh from the farm)
Honey
Syrup
Powdered Sugar
French Toast Mix:
6 Brown Eggs ( Fresh from the farm)
3 cups of Milk
2/4 tablespoons of Cinnamon
2/4 tablespoons of Nutmeg
2/4 tablespoons of Sugar
Instructions for bread:
1. In a small bowl, stir warm water together with yeast and honey.
Set aside 10 minutes to proof and bubble up.
1. In a large bowl, add 4 cups all-purpose flour, sugar, salt and melted butter. Gently stir. Create a well in the middle and pour in the yeast mixture.
2. Begin mixing using a large spoon, until a dough forms.
3. On a lightly floured surface, knead the dough with your hands for approximately 6 minutes, all the while adding small amounts of flour until the dough is smooth and slightly sticky. The dough should feel tacky, but not stick to your hands.
4. Place the dough into a well greased bowl and roll to coat.
Cover with a clean kitchen towel and allow the dough to rise 1 hour or until doubled in size.
5. Grease 2 loaf pans.
6. Remove the dough from the bowl and divide into two even mounts.Gently press into two rectangles approximately the same width as your loaf pans. Gently roll each piece of dough until you form a log and place into each greased loaf pan.
7. Cover each loaf pan and allow to rise for approximately 45 minutes or until doubled in size.
8. Preheat the oven to 350 degrees
9. Bake loaves for 30-40 minutes or until completely cooked through, being careful to not overbake.
Remove from the oven, and allow to cool for 20 minutes in pans before removing to cooling racks.
Cool bread completely before cutting into slices Store in airtight containers.
Instructions for the French Toast mix:
1. Crack 6 eggs into a bowl
2. Pour 3 cups of milk into bowl
3. Add 2/4 of cinnamon, nutmeg, and sugar into bowl
4. Mix until well blended
Instructions for Bacon Scrapple:
1. Cut 3 fairly thick slices of scrapple
2. Preheat pan to medium temp (add nonstick spray cooking oil)
3. Cook scrapple until finely browned and crisped
Instructions for eggs:
1. Preheat pan to medium temp(add nonstick spray cooking oil)
2. Crack egg in pan
3. Fry until over easy
Instructions:
1. Coat bread on both sides with French toast mix
2. Cook in pan for on each side for 5-10 minutes
3. Take French toast bread and bake in oven at 350 for 20 minutes (to give it a toasted texture)
4. Sugar bread
5. Place Egg and Scrapple on bread
6. Drizzle with Honey-Syrup
7. Powder the top of the other bread with powdered sugar and drizzle with honey.
Serve Size 3-4 people
Cook time: 2 hours.
