Homemade Soft Pretzel Dough

Ingredients Used:


Dough:

  • 3 cups warm water
  • 6 teaspoons yeast
  • ¾ cup granulated sugar
  • 3 teaspoons salt
  • 9 cups all-purpose flour
  • 1 1/2 vegetable oil
  • 1 1/2 puréed scrapple


Baking Soda Water Bath:

  • 2 cups hot water
  • • ¼ cup baking soda


Preparation Instructions:


  1. In a large mixing bowl, combine warm water and yeast. Let sit for 5-10 minutes until foamy.
  2. Stir in sugar, salt, and vegetable oil, scrapple oil (or butter mixture).
  3. Gradually add flour, one cup at a time, until a dough forms.
  4. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  6. Preheat oven to 400°F (200°C).
  7. Shape dough into pretzels.
  8. Mix hot water and baking soda in a bowl until dissolved.
  9. Dip each pretzel into the baking soda bath for a few seconds, then place on a greased or parchment-lined baking sheet.
  10. Bake for 12-15 minutes or until golden brown.
