Hot Scrapple Jambalaya
Ingredients
onion
celery
green pepper
garlic
canned tomatoes
hot and spicy scrapple
cajun spice mix
jasmine rice
chicken stock
Directions
- dice holy trinity mirepoix (green pepper, celery, onion) 1 onion 1 large green bell pepper 3 celery stalks
- sweat mirepox
- add rice
- add 1 cup canned tomatoes
- Add 2 cups stock
- Bring to a boil stirring somewhat occasionally
- Crumble and Add 2 packs of hot and spicy scrapple after the liquid boils Reduce heat to a simmer and stir in spice mix
- Cook until liquid is gone
- Garnish with scallions and candied scrapple
- Serve and enjoy
