Hot Scrapple Jambalaya

Ingredients


onion

celery

green pepper

garlic

canned tomatoes

hot and spicy scrapple

cajun spice mix

jasmine rice

chicken stock


Directions

  • dice holy trinity mirepoix (green pepper, celery, onion) 1 onion 1 large green bell pepper 3 celery stalks
  • sweat mirepox
  • add rice
  • add 1 cup canned tomatoes
  • Add 2 cups stock
  • Bring to a boil stirring somewhat occasionally
  • Crumble and Add 2 packs of hot and spicy scrapple after the liquid boils Reduce heat to a simmer and stir in spice mix
  • Cook until liquid is gone
  • Garnish with scallions and candied scrapple
  • Serve and enjoy
