Scrapp The Toast
Ingredients
1lb bacon Scrapple
3 medium or 2 lg ripe avocados
1/4 of a red onion diced small
3-5 sprigs fresh cilantro chopped fine
juice of 1 medium lime and zest of half
1/2 jalapeno seeded and diced small
salt to taste
1 tbsp butter
2 lg eggs
Directions
Sliced the ripe avocados in half, remove the pits, and scoop them into a mixing bowl then use a fork to gently mash. Add onions, jalapeno, lime juice, cilantro, and salt to taste. Stir everything together taste and set aside. Then, you gonna slice your scrapple to the desired thickness of toast and pan fry to a very crisp outer crust. Then, remove and set aside then you wanna slice 2 more pieces much thinner and pan fry hard crisp to make a crumb topping remove from the heat, and set aside. Now, you're gonna want to use your butter to fry your eggs sunny side up making sure to keep them yolks runny. Now we assemble plate the scrapple you made as the toast and take a nice 2 tbsp of the avocado mixture and spread it onto the scrapple being very careful not to rip the crust then you wanna place the sunny side up eggs on top and then last but not least the thin crispy scrapple crumble on top and enjoy.
