Scrapple and Sweet Potato Muffins with Scrapple Hot Honey Crumble

Ingredients


Muffins

  • 1½ cups scrapple, diced
  • 1 cup sweet potato, cooked and mashed
  • 2 large eggs
  • ⅓ cup vegetable oil
  • ½ cup milk
  • 1¾ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • Pinch of black pepper
  • ½ teaspoon sage
  • ¼ teaspoon nutmeg
  • Hot Honey Crumble Topping
  • 1 cup scrapple, pan-fried and crumbled
  • 1 tablespoon honey
  • ½ tablespoon cayenne pepper



Key Ingredients & Preparation

  • Scrapple: Dice 2½ cups of scrapple into small cubes. Pan-fry until crispy, then drain on paper towels.
  • Sweet Potato: Mash 1 cup of cooked sweet potato (about one medium sweet potato, roasted or boiled) and allow it to cool.
  • Wet Ingredients: Eggs, vegetable oil, and milk.
  • Dry Ingredients: Flour, baking powder, salt, sage, nutmeg, and black pepper.
  • Hot Honey Crumble: Combine crumbled crispy scrapple with honey and cayenne pepper.



Directions


1. Crisp the Scrapple

Dice 2½ cups of scrapple into small, bite-sized cubes. Pan-fry over medium-high heat until crispy. Drain thoroughly on paper towels to remove excess grease and allow to cool.


2. Mix the Wet Ingredients

In a large mixing bowl, whisk together the mashed sweet potato, eggs, vegetable oil, and milk until smooth.


3. Mix the Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, salt, black pepper, sage, and nutmeg.


4. Combine the Batter

Gently fold the wet ingredients into the dry ingredients using a spatula. Do not overmix.


5. Fold in the Scrapple

Carefully fold in 1½ cups of the cooled, crispy scrapple pieces.


6. Prepare the Crumble Topping

Mix the remaining 1 cup of crispy crumbled scrapple with the honey and cayenne pepper. Set aside.


7. Bake

  • Preheat the oven to 375°F.
  • Grease or line a muffin tin with paper liners.
  • Fill each muffin cup about ¾ full.
  • Bake for 15 minutes.
  • Remove from the oven, top each muffin with the hot honey crumble mixture, and return to the oven for an additional 5–10 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
