Directions
1. Crisp the Scrapple
Dice 2½ cups of scrapple into small, bite-sized cubes. Pan-fry over medium-high heat until crispy. Drain thoroughly on paper towels to remove excess grease and allow to cool.
2. Mix the Wet Ingredients
In a large mixing bowl, whisk together the mashed sweet potato, eggs, vegetable oil, and milk until smooth.
3. Mix the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, salt, black pepper, sage, and nutmeg.
4. Combine the Batter
Gently fold the wet ingredients into the dry ingredients using a spatula. Do not overmix.
5. Fold in the Scrapple
Carefully fold in 1½ cups of the cooled, crispy scrapple pieces.
6. Prepare the Crumble Topping
Mix the remaining 1 cup of crispy crumbled scrapple with the honey and cayenne pepper. Set aside.
7. Bake
- Preheat the oven to 375°F.
- Grease or line a muffin tin with paper liners.
- Fill each muffin cup about ¾ full.
- Bake for 15 minutes.
- Remove from the oven, top each muffin with the hot honey crumble mixture, and return to the oven for an additional 5–10 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Enjoy warm for the best flavor and texture!
