Scrapple Bi Bim Bap

Cucumber Kimchi:

1 Cucumber julienned

2-3 Spring onions

2 Tlbs of s e s a m e oil

4 cloves of crushed garlic

3 tlbs of soy sauce

1/4 cup of water


Combine ingredients in bowl, refrigerate for at least one hour.


Pickled Daikon Radish:

1/2 Daikon radish julienned

1/4 cup rice wine vinager

1/4 cup of sugar

1 tlbs Salt


Combine ingredients in a bowl, refrigerate for at least two hours.


Scrapple Bi Bim Bap

1 lbs of scrapple, cubed and fried

1 cup of rice

1 large egg, fried sunny side up.

1 carrot julienned

4 Baby Bella mushrooms sliced

4 white mushrooms

1 c u p short grain rice.

1/2 cup of bean sprouts


Place veggies and mushrooms on baking sheet, brush on sesame oil and soy sauce, and place in oven at 375 degrees for 10 mins. Boil rice for with water, lower heat and cover until cooked. Fry cubed scrapple in pan with oil, place to side. Fry egg and place on top of plated rice. Place baked veggies and mushrooms on top of egg, with the scrapple, kimchi,

and pickled radish on side of bowel.
